Varietal: 100% Merlot Vintage: 2012 Region: Bordeaux Harvest Method: Harvested by hand, in picking baskets. Vinification: De-stemming, cold pre-fermentation maceration, alcoholic fermentation, final thermo-maceration (30-32° C), left to ferment in vats for 4 to 7 weeks depending on the vintage. Malolactic fermentations in concrete tanks. Aging Process: 14 months in barrels (one-third new) Aroma/Palate: Both a very Merlot Saint-Emilion wine, meaning intense and sensuous, and a very classic wine, meaning cool and nicely-balanced. It is when drunk with food that the full range of its qualities is best appreciated: full-bodied, velvety, without too overpowering a concentration. A very careful sorting when harvested and wise maturing processes in barrels give it an extra noble touch. Serving Temperature: 16°-18°C/60°-64°F |
